I REALLY like good hollandaise, so please make a BIG batch.  yum yum I worked at a restaurant in Durango where we had killer 'daise, and there's just nothing else like the real thing.  Are you sure 2 lemons will be enough?

I'll make as much and however the masses prefer. Another lemon would be absolutlely fine!
Maybe next year we will make some "Chicago style". Instead of Canadian Bacon you use a piece of beef tenderloin and instead of straight Hollondaise you cover with Bernaise! Mmmmmmmmmmmmm,meat!

I say, why wait til next year? Sounds really good, but do you put it on an english muffin and an egg, or just the meat and bearnaise?  Just tenderloin with sauce sounds good to me for dinner!  Along with a nice bottle of wine and some grilled veggies and mushrooms and a crusty baguette with real butter.  Damn can you tell I haven't had lunch yet?  I'm HUNGRY and this isn't helping.  LOL

The best way is to toast (with garlic & butter) a piece of really good sourdough in lieu of the E muffin.
Another variation that I have thought of but never tried is to start with a good thich crab cake, top with a piece of roasted red bell pepper, then the poached egg, and then another variation of Hollandaise called a Maltaaise. This is Hollandaise with an Orange reduction and a bit of zest.
Oh well, theres always two years from now!

last summer, I started poaching/cooking eggs in half of a green pepper on the grill.  these ideas are making me hungry and i just ate.

Looks like Wed. is going to be one hell of a day! A good breakfast will get everyone started off on the right foot! Should be great! Come on and come all, but be early, starts at 10am. Figure we have enough to feed about 70-75. The looks on the early morning faces after they have their first bite is going to be fun. Thanks to all of the coolking crew in advance!
