Am i missing something or does the main stage schedule not have times listed as of yet?

Most days music starts around 11. Thursday and Sunday end earlier maybe by 11, Friday and Saturday tend to go later more around 12. Exact times usually aren't out till festival starts. But you can do the math, line-up is listed daily in the reverse order. The sets get longer as the day goes by, with the top two acts getting a 1.5 hour or greater set length, and the opening sets are about 45 minutes to an hour.

If the reverse order is true and Nightgrass shows start at 11.  Greensky and Infamous are the last acts each night does that mean night grass shows will have openers or will Friday and Saturday night end before 11 at the main stage?

There's usually a bit of overlap, on Friday and Saturday with end of Main Stage, and beginning of NG. But also most the NG doesn't start right at 11. For NG shows most times you have to miss last few songs on the main stage to get there for full show. If you want to be up front, or good seats usually requires missing most of last act on main stage.
And no openers at NG shows.
