 Wave Hey friends. We're trying to last minute come up with our camp food menu and hitting a wall. Looking to possibly try some new ideas. What's some of y'alls go to camp meals, both the fancy/gourmet stuff, and the easy quick maybe pre-made foods, for a quick bite during festival.

We're thinking pre-made chili, Maybe pre-made burritos (but whats the best way to reheat)? Probably a couple mornings of big skillet breakfasts, potatoes, bacon, eggs veggies etc...

Our kitchen can handle anything except baking.
What would you suggest?

I've already searched and gone thru all the previous years food posts. looking for fresh ideas.

One of my favorite subjects!

Premade chili 100000% is one of my favorites - and so easy!  Last year I was looking to simplify breakfast so I brought a ton of egg whites from costco and made frittattas every morning - just add whatever veggies you want (onions, spinach, peppers, tomatoes, etc) and it can be different enough each day.

Burritos are also a staple for us.  I'll put a silicone trivet in the bottom of a dutch oven (your 14 qt should work just fine), and heat it up slowly (don't forget to flip them)!

As for other premade meals:
This is one of my all time favorites - so simple but so delicious.  You can dress it up however you want too and to make it even easier, substitute the whole tomatoes for Rotel, use boneless skinless chicken thighs instead of the whole chicken, add in some kale and you're golden!  This freezes pretty damn well (potatoes get mildly mushy but that's fine).

Here's another dump and forget pressure cooker recipe I really like:
1 cup presoaked (15 min) drained white rice
2 cans rotel (I like hot, duh)
frozen veggies (I did corn and onions/peppers but you could also do spinach or kinda whatever you want)
chicken thighs (presear if you're feeling fancy)
cumin, onion powder, garlic powder, chili powder, sprinkle of salt
some salsa on top of the chicken thighs
Little bit of veggie/chx broth (not a ton, just a splash or two)

Seal, high pressure 7-8 minutes. Natural release. Remove and shred chicken, add back to stuff and mix it up.

Side note: you mentioned inability to bake - years ago we bought a collapsible camping oven which has actually been super handy for random things - Andrea even successfully made brownies in them one year!

That's a killer recipe! Going to try it or variation.  Thumbs Up

Just found out the truck bed capper I ordered in February isn't arriving till the day we leave!!  Mad

Hoping it can get installed in time before we leave, or hoping it doesn't rain on the ride out!

One thing we like about chili is it's variable! One day we'll have chili dogs, another frito chili pie, and maybe a couple mornings of chili and eggs. That way you don't get bored of a repetitive meal.

We always took too much food and ended up making several trips to the liquor store. SO, we would make our list, cut the food in half, double or triple the liquor, and it worked out beautifully.
