Yum that looks good!  If it had some pickles in it, it would almost be a rouladen! 
I wonder if they could be cooked ahead of time and reheated? That would save some time in the morning in camp.  (TOM) I don't know if I could survive smelling it cooking for 2 or 3 hours!  That would really be a test of our stamina in the quest for bacon.
