The easy solution is to bring two sets of "ski wear".  One for water skiing, the other for snow skiing.

Picked up an awesome 3 in one Jacket at REI by Northface. Waterproof shell, zip out liner that can be worn as a lighter jacket, and when you don't need the extra warmth, and it is raining, you can wear just the light weight shell.  Pirate
