Hey,

me and some friends are headed up to portland from colorado for Railroad Earth on new years, and none of us have ever been to portland/seattle (our roadtrip destinations)... and were looking for some cool stuff to do while were there... any suggestions?

You've got to check out Voodoo Donuts in downtown Portland.  The maple bacon bars are excellent!
